The aim of this work was to reliably identify odorous compounds of European seabass (Dicentrarchus labrax) after 1, 4 and 15 days of storage in order to find markers of freshness or spoilage. Descriptive sensory analysis and gas chromatography-mass spectrometry (GC-MS) analysis were conducted to investigate changes in aroma characteristics of beeflike process flavours (BPFs) prepared from enzymatically hydrolyzed beef (beef base) of different DH (degree of hydrolysis) with other ingredients. Five attributes (beefy, meaty, simulate, mouthful and roasted) were selected to assess BPFs. The results of descriptive sensory analysis confirmed that BPF2 from beef base of moderate DH 29.13% was strongest in beefy, meaty and simulate characteristics; BPF4 and BPF5 from beef base of higher DH (40.43% and 44.22%, respectively) were superior in mouthful and roasted attributes respectively; while BPF0 without beef base gave weaker odour for all attributes. Twenty six compounds from GC-MS were selected as specific compounds to represent beef odour based on their odour-active properties assessed by a detection frequency method of GC-O and correlation of their contents with sensory attributes intensity. Correlation analysis of molecular weight (MW) of peptides, odour-active compounds and sensory attributes through partial least squares regression (PLSR) further explained that beef base with DH of 29.13% was a desirable precursor for imparting aroma characteristics of beeflike process flavour.

However, data on their contribution to the overall aroma of this type of chocolate are scarce. As a result of their pH-dependent instability and their low volatility, a reliable quantitation of lactones is a challenge. Thus, to allow for a quantitation of nine lactones in one single comprehensive two-dimensional gas chromatography with time-of-flight mass spectrometry in electron ionization mode run, new synthetic routes were developed for five carbon-13-labeled gamma-lactones and four deuterium-labeled delta-lactones, with the isotope label in the ring to be used in stable isotope dilution assays. The concentrations of the nine lactones were then analyzed in raw and pasteurized cream as well as in a heat-treated raw cream. delta-Dodecalactone and delta-decalactone showed the highest concentrations in both the raw and pasteurized cream. In the latter, delta-dodecalactone reached a 2.5-fold higher concentration compared to the raw cream. Subsequent heat treatments in a lab scale showed a further increase by factors of 13 and 19, respectively, suggesting a high potential of lactone precursors in cream. The results serve as a basis for further studies on lactone formation in other thermally processed products, such as milk chocolate.

Waxes are important additives in hot melt adhesives for improving the properties of the final product such as the melting point or viscosity. Up to one third of the formulation of the final product consists of waxes. For this purpose usually polyethylene (PE) waxes or Fischer-Tropsch (FT) waxes are used. Waxes affect the overall smell of hot melt adhesives, and often in a negative way. In our study the overall odor of five different waxes made by different manufacturing methods was characterized in order to classify the samples according to their overall smell. First of all the samples were evaluated by a trained sensory panel at room temperature and after heating to 80 C using descriptive analyses. Then the volatiles responsible for the overall smell of the samples were directly extracted using thermal desorption in combination with cryo-focusing and analyzed by gas chromatography-mass spectrometry-olfactometry (GC-MS/O). Moreover, the volatiles in the waxes were recovered using solvent extraction and isolated by solvent assisted flavour evaporation (SAFE). The most dominant odorants were then characterized by GC-O and odor extract dilution analysis (OEDA). Using these approaches 39 odorants having different chemical structures were successfully identified for the first time in waxes used as additives in hot melt adhesives. These odorants included alcohols with tallowy, soapy odor qualities such as 2-methyl-2-decanol, 2-methyl-2-dodecanol, and 1-undecanol, as well as a range of lactones such as gamma-decalactone and gamma-undecalactone having soapy, peach-like odor descriptions. The attributes of the odorants detected using GC analyses correlated with the descriptive analyses of the human sensory panel. This study indicates that the odor impact of waxes to hot melt adhesives depends on the manufacturing method of each single wax and that there is no clear trend for the preferential usage of PE or FT waxes.

Plants of the Lavandula genus have been widely used in folk and traditional medicine. The aim of this study was to evaluate the qualitative and quantitative chemical composition of the essential oil of the aerial parts of Lavandula atriplicifolia (EOAPLA) grown in Saudi Arabia and its potential cytotoxicity to cancer cell lines. The essential oil was characterized and quantified by GC?MS and GC-FID. The potential cytotoxicity of the essential oil was evaluated against colorectal (LoVo) and hepatocellular (HepG2) carcinoma cell lines by using the MTT and lactate dehydrogenase (LDH) cytotoxicity assays. A total of 36 compounds were identified that constituted 92.3% of the total oil. The chemotype of the species was dominated by C-10 massoia lactone (46.65%) as the major compound followed by oxygenated monoterpenes (28.43%). This is the first report to describe the presence of the rare compound massoia lactone in the essential oils from Lavandula species. The data revealed that EOAPLA inhibited the growth of LoVo and HepG2 cells in a dose-dependent manner. Treatment with 10 mug/mL EOAPLA for 2 days resulted in significant damage to LoVo cells in comparison with the control. In contrast to the control cells, the LoVo cells showed morphological alterations such as cytoplasmic condensation, shrinkage, and the formation of debris. Moreover, EOAPLA treatment induced apoptosis in LoVo cells since it increased the expression of caspase 3/7. The cytotoxic and anti-proliferative properties of EOAPLA make it a good candidate for treatment of various cancers.

Characteristic aromas are usually key labels for food products. In this study, the volatile profiles and marker substances of coconut jam during concentration were characterized via sensory evaluation combined with headspace solid phase microextraction-gas chromatography-tandem mass spectrometry (HSPME/GC-MS). A total of 33 aroma compounds were detected by HSPME/GC-MS. Principal component analysis revealed the concentration process of coconut jam can be divided into three stages. In the first stage, esters and alcohols were the two main contributors to the aroma of the coconut jam. Next, a caramel smell was gradually formed during the second stage, which was mainly derived from aldehydes, ketones and alcohols. The concentration of aldehydes increased gradually at this stage, which may be the result of a combination of the Maillard reaction and the caramelization reaction. In the final sterilization stage, the ?odor intensity? of caramel reached the maximum level and a variety of aroma compounds were produced, thereby forming a unique flavor for the coconut jam. Finally, furfural fit a logistic model with a regression coefficient (r2) of 0.97034. Therefore, furfural can be used as a marker substance for monitoring the concentration of coconut jam.
